Vintage Conditions

For the 2021 vintage, that magic has been delivered in wines with bright fruit and subtle power, lovely rounded tannin’s in the reds and ripe fruit acids in the whites. 2021 was a very cool year and one of the wettest on record for Gundagai. It saw fruit yield down by around 30% mainly due to the drought condition from the previous few years and disease pressure that comes with a wet year.

Winemaking Notes

A minimalist approach in the winery to take advantage of the exceptional fruit quality included twice daily plunging and pressing after 12 days on skins to a mixture of new and seasoned French oak. The individual parcels were kept separate and aged on lees for 12 months until the final selections of the parcels were made.

  • Grilled or roast beef especially served rare or with a pepper sauce.
  • Ribs, spicy sausages and smoked brisket in particular.
  • Big beefy stews such as ox cheek, especially ones cooked in wine or with a touch of smoky spice like a chilli roast or grilled lamb.
  • Kangaroo. Sounds clichéed but we Aussies do eat it and its rich gamey meat suits shiraz a treat. Failing that, venison.
  • Strong hard cheeses especially cheddar. With its sweetness it can also handle a mellow blue.
