The 2017 vintage began positively with above average rainfall in winter and spring. Even bud burst was followed by very cool conditions for the first part of spring. Some rain mid-January was succeeded with dry weather for the rest of the summer, rendering disease pressure as low. Mild days and cool nights delayed ripening. This longer hang-time resulted in excellent conditions for flavour and aroma development.
Fermented in 2 to 5 tonne open top stainless steel fermenters plunged or pumped over daily until the desired concentration and colour was achieved, left on skins for seven days before being pumped to one and two year old French barriques for maturation.
Wine specs
Deep ruby colour, medium intensity nose of dark cherry accompanied by hints of classic oak spice. Rich and earthy on the palate with a finishing length that replays dark cherry and mocha.
